Chicken Salad

home-garden, chicken, nuts, onion, mango, grapes, strawberries, avocado, rosemary, parsley, oregano, sea-salt, kosher-salt, miracle-whip, apple-celery, garlic-water-crackers, sweet-marjoram-grapes, water-crackers

Chicken Salad

6-8 servings

4 large chicken breasts rinsed and skin removed (recommend chicken not fed hormones or antibiotics)
1/2 lb of seedless grapes
1 red apple diced
2 tbl of fresh sweet marjoram
1 tea fresh Rosemary
1/2 teas fresh Oregano
1/4 cup of fresh parsley
1/4 tea of fresh ground ginger
1/2 tea of Sea Salt or Kosher Salt
4 sticks of celery or 6 sticks of celery hearts
1/4 cup of sweet onion finely diced
1/4 cup of garlic finely diced
Miracle Whip
Water Crackers

Add chopped nuts (optional)
Add two chopped avocados (optional)
Add chopped Mango (optional)
Add chopped Strawberries (optional)
Or add any fruit you like as many as you like

~ Add 1 tbl of salt to help bring water to a boil
~ Add chicken breasts to boiling water and boil until cooked. While chicken is cooking.
~ dice grapes into small pieces
~ cut apple into tiny pieces
~ celery finely diced and remove all strings
~ after chicken is cooked and cool enough to handle cut into small chunks and add to large bowl
~ Add rest of ingredients and mix
~ Add small amounts of Miracle Whip until you reach the consistency you want
~ Place in refrigerator
~ Serve cold
~ Serve with water crackers

    estela, After you finish writing your article go to the bottom of the page and look for this.

    • Add Media If Desired:

    Click on Upload Image

    Then Click on Option 2 - Flicker and it'll find photos matching your tags, sometimes. If the photos you want don't come up, you'll have to play with it by typing in different things until you find what you want. If the picture you choose doesn't appear in the picture box delete and look for other pictures. Keep trying until one appears in box.

    Ann, I never met an avocado OR mango dish I didnt love! This salad sound soooo perfect for summer dining. I'm really gonna impress my friends with this one! Thanks PIK.

    WOOHOO! I made this tonight, and it was AWESOME! I put some cashews in it, because I didn't have any other nuts handy, and it was soooo good.

      Sounds good I usually use pineapple, celery, and whatever nuts I have handy. Never thought of grapes will have to do some experimnting
